- 4 large potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk (or other non-dairy milk)
- 1 teaspoon thyme
- Salt and pepper to taste
- Chopped chives for garnish
Instructions
- In a large pot, sauté the onions and garlic over medium heat until translucent.
- Add the diced potatoes and vegetable broth. Bring to a boil and then reduce to a simmer for about 20 minutes or until the potatoes are soft.
- Blend the soup until smooth using an immersion blender or a regular blender.
- Stir in the coconut milk, thyme, salt, and pepper. Simmer for an additional 5 minutes.
- Serve hot, garnished with chives.
Notes
For added flavor, consider mixing in other vegetables like carrots or celery. Use starchy potatoes like Russets for a creamier texture.
