  • 4 cups vegetable broth
  • 1 cup coconut milk (or other non-dairy milk)

  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onions and garlic over medium heat until translucent.
  2. Add the diced potatoes and vegetable broth. Bring to a boil and then reduce to a simmer for about 20 minutes or until the potatoes are soft.
  3. Blend the soup until smooth using an immersion blender or a regular blender.
  4. Stir in the coconut milk, thyme, salt, and pepper. Simmer for an additional 5 minutes.
