  • ¼ cup maple syrup
  • 2 Tablespoons oat milk or any plant-based milk
  • 2 teaspoons cornstarch
  • ½ teaspoon pumpkin pie spice

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the vegan butter, sugar, and brown sugar until light and fluffy.
  3. Add the flax egg and vanilla, mixing until well combined.
  4. Add all-purpose flour, pumpkin pie spice, baking powder, and salt, mix until smooth.
  5. Refrigerate dough for at least 30 minutes to firm up.
