Description

These melt-in-your-mouth raspberry truffles combine tart raspberry powder with rich dark chocolate for an elegant treat.


Ingredients

  • 14 ounces high-quality dark chocolate (60-75% cocoa solids), finely chopped or in chip form
  • ¾ cup heavy whipping cream (at least 36% fat)
  • 2 Tablespoons unsalted butter, cut into small cubes
  • 1.6 ounces freeze-dried raspberries (about 2 cups), crushed into a fine powder
  • 14 ounces white chocolate chips or bars, for optional coating or decoration

Instructions

  1. Finely chop your dark chocolate and place it into a heatproof bowl.
  2. In a small saucepan over medium heat, combine the heavy cream and unsalted butter until just simmering.
  3. Pour the hot cream mixture over the chopped chocolate, let it sit for 5 minutes, then whisk until smooth.
  4. Stir in crushed freeze-dried raspberry powder to your desired flavor intensity.
  5. Cover the bowl with plastic wrap and chill in the refrigerator for at least 3-4 hours, or overnight.
  6. Scoop uniform portions of ganache and roll into smooth balls.
  7. Optionally chill the shaped truffles to firm them up before coating.
  8. Coat the truffles in your chosen coating and arrange them on a platter.
  9. Allow to set before serving.
