Ingredients

  • 2 cups watermelon, pureed
  • 1 cup cream cheese, softened
  • 1/2 cup sugar
  • 1/2 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup sugar for the crust

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press the mixture into the bottom of a greased 9×9 inch baking dish.
  3. Bake the crust for 10 minutes, then let it cool.
  4. In a mixing bowl, beat the cream cheese and 1/2 cup sugar until smooth.
  5. Add sour cream, lime juice, and lime zest, mixing until well combined.
  6. Gently fold in the pureed watermelon.
  7. Pour the cheesecake mixture over the cooled crust.
  8. Bake for 25-30 minutes, or until set.
  9. Allow to cool in the fridge for at least 4 hours before cutting into bars.
  10. Serve chilled and enjoy!
