- 2 cups watermelon, pureed
- 1 cup cream cheese, softened
- 1/2 cup sugar
- 1/2 cup sour cream
- 1 tablespoon lime juice
- 1 teaspoon lime zest
- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 1/4 cup sugar for the crust
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press the mixture into the bottom of a greased 9×9 inch baking dish.
- Bake the crust for 10 minutes, then let it cool.
- In a mixing bowl, beat the cream cheese and 1/2 cup sugar until smooth.
- Add sour cream, lime juice, and lime zest, mixing until well combined.
- Gently fold in the pureed watermelon.
- Pour the cheesecake mixture over the cooled crust.
- Bake for 25-30 minutes, or until set.
- Allow to cool in the fridge for at least 4 hours before cutting into bars.
- Serve chilled and enjoy!
Notes
These bars freeze well and can be made in advance. Use fresh, ripe watermelon for the best flavor.
