Description

Bright and refreshing no-bake dessert combining watermelon and lime-scented cheesecake for a perfect summer treat.


Ingredients

  • 2 cups watermelon puree
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup lime juice
  • 1 cup crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • Zest of 2 limes
  • 1/4 cup fresh mint leaves for garnish

Instructions

  1. In a bowl, mix crushed graham crackers, melted butter, and lime zest. Press this mixture into the bottom of a lined baking dish.
  2. In a mixing bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and lime juice, mixing well.
  3. Fold in watermelon puree into the cream cheese mixture until well combined.
  4. Pour the cheesecake filling over the crust and spread evenly.
  5. Refrigerate for at least 240 minutes or until set.
  6. Cut into bars and garnish with fresh mint leaves before serving.

Notes

For the best color and flavor, strain the watermelon puree through a fine sieve to remove excess pulp for a smoother filling.
