- 2 cups watermelon puree
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1/4 cup lime juice
- 1 cup crushed graham crackers
- 1/4 cup melted butter
- 1 tablespoon lime zest
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix crushed graham crackers, melted butter, lime zest, and a pinch of salt. Press the mixture firmly into the bottom of a greased 9×9-inch baking dish.
- In a separate mixing bowl, combine cream cheese, sugar, sour cream, vanilla extract, and lime juice. Beat the mixture until smooth and creamy.
- Gently stir in the watermelon puree until well incorporated.
- Pour the watermelon cheesecake mixture over the graham cracker crust, smoothing it out evenly.
- Bake for 30-35 minutes or until the center is set and no longer jiggly.
- Allow the bars to cool completely, then refrigerate for at least 4 hours before cutting into squares.
