- 3 cups cubed seedless watermelon
- 2 cups sliced English cucumber
- 1/4 cup fresh mint or basil, chopped
- 1/4 cup crumbled feta (optional)
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt and pepper to taste

Instructions
- Prepare produce: Cube the watermelon and slice the cucumber. Peel and de-seed cucumbers if not using English variety.
- Chop herbs: Finely chop mint or basil.
- Mix base: In a large bowl, combine watermelon, cucumber, and herbs.
- Make dressing: In a small bowl, whisk lime juice, olive oil, salt, and pepper.
- Toss: Pour the dressing over the salad and toss gently to combine.
- Top & serve: Add crumbled feta before serving. Chill and enjoy within an hour for best texture.

- Feta adds a salty contrast — leave out for vegan version.
