Description

Ingredients

  • 3 cups cubed seedless watermelon
  • 2 cups sliced English cucumber
  • 1/4 cup fresh mint or basil, chopped
  • 1/4 cup crumbled feta (optional)
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Optional Add-Ins:

  • Thinly sliced red onion
  • Avocado cubes
  • Arugula
  • Chili flakes
  • Mango or pineapple chunks

Instructions

  1. Prepare produce: Cube the watermelon and slice the cucumber. Peel and de-seed cucumbers if not using English variety.
  2. Chop herbs: Finely chop mint or basil.
  3. Mix base: In a large bowl, combine watermelon, cucumber, and herbs.
  4. Make dressing: In a small bowl, whisk lime juice, olive oil, salt, and pepper.
  5. Toss: Pour the dressing over the salad and toss gently to combine.
  6. Top & serve: Add crumbled feta before serving. Chill and enjoy within an hour for best texture.
