Ingredients
Scale
- ½ ripe watermelon, peeled and cubed
- 1 large English cucumber or 2 small hot house cucumbers, sliced or cubed
- 15 fresh mint leaves, chopped
- 15 fresh basil leaves, chopped
- ½ cup feta cheese, crumbled (preferably from a block in brine)
- For the Dressing:
- 2 tablespoons honey
- 2 tablespoons lime juice (or lemon juice)
- 2 tablespoons extra virgin olive oil
- Pinch of kosher salt
Instructions
- Make the Dressing: In a small bowl, whisk together the honey, lime juice, olive oil, and a pinch of kosher salt until emulsified.
- Prep the Salad: Cube the watermelon, slice or cube the cucumber, and chop the mint and basil leaves.
- Assemble the Salad: In a large mixing bowl, gently combine the watermelon, cucumber, and chopped herbs.
