- 1 lb chicken breast
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- In a crockpot, combine chicken breast, white beans, corn, onion, garlic, cumin, chili powder, and chicken broth.
- Season with salt and pepper.
- Cover and cook on low for 6–8 hours or high for 4 hours.
- Remove the chicken, shred it, and return it to the pot.
- Stir in heavy cream and let it heat through for 15 minutes.
- Serve hot, garnished with cilantro.
Notes
For variations, swap chicken with turkey or make it vegan by using beans and coconut milk.
