Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1 cup fresh or frozen raspberries
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then mix in the vanilla.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk, and mix until just combined.
  6. Fold in the raspberries and white chocolate chips gently.
  7. Pour the batter into the prepared loaf pan and swirl it gently with a knife.
  8. Bake for 55 to 60 minutes or until a toothpick comes out clean.
  9. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
