- 2 lbs beef stew meat, cut into chunks
- 4 cups beef broth
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Brown the beef chunks on all sides, then remove from the pot.
- In the same pot, add onions and garlic, sauté until translucent.
- Add carrots and potatoes, stirring for a few minutes.
- Return beef to the pot and stir in tomato paste, thyme, rosemary, salt, and pepper.
- Pour in beef broth and bring to a boil.
- Reduce heat and let it simmer for about 90 to 120 minutes, or until beef is tender.
- Adjust seasoning as needed and serve hot.
Notes
For deeper flavor, sear the beef chunks longer before removing them from the pot. You can add additional vegetables like peas or mushrooms for a twist. To thicken the stew, add a cornstarch slurry during the last 10 minutes of cooking.
