Description
A classic Southern-style yellow squash casserole featuring tender squash and onions, creamy cheese filling, and a buttery cracker topping. Comforting and perfect as a side dish for any meal.

- 4 cups yellow squash, thinly sliced
- 1 medium onion, diced
- 2 tablespoons unsalted butter
- 2 large eggs
- 1/2 cup mayonnaise or sour cream
- 1 cup shredded cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 1/2 teaspoon thyme or paprika
- 1 cup crushed Ritz crackers (or breadcrumbs)
- 1 tablespoon butter (for topping)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a skillet, sauté yellow squash and onion in 2 tbsp butter over medium heat for 5–7 minutes until just tender. Drain excess liquid.
- In a large bowl, whisk eggs, then mix in mayo or sour cream, shredded cheese, salt, pepper, and optional seasonings.
- Add sautéed squash and onions to the egg mixture and combine gently.
- Pour mixture into the prepared dish.
- Top with crushed crackers and dot with 1 tbsp butter.
- Bake uncovered for 30–35 minutes until the top is golden and bubbly.
- Cool for 10 minutes before serving.
Notes
You can make this ahead of time and refrigerate it before baking. For a twist, mix cheddar with a bit of mozzarella or add a pinch of cayenne for heat.
