Description

  • 4 cups yellow squash, thinly sliced
  • 1 medium onion, diced
  • 2 tablespoons unsalted butter
  • 2 large eggs
  • 1/2 cup mayonnaise or sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/2 teaspoon thyme or paprika
  • 1 cup crushed Ritz crackers (or breadcrumbs)
  • 1 tablespoon butter (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a skillet, sauté yellow squash and onion in 2 tbsp butter over medium heat for 5–7 minutes until just tender. Drain excess liquid.
  3. In a large bowl, whisk eggs, then mix in mayo or sour cream, shredded cheese, salt, pepper, and optional seasonings.
  4. Add sautéed squash and onions to the egg mixture and combine gently.
  5. Pour mixture into the prepared dish.
  6. Top with crushed crackers and dot with 1 tbsp butter.
  7. Bake uncovered for 30–35 minutes until the top is golden and bubbly.
  8. Cool for 10 minutes before serving.

Notes

You can make this ahead of time and refrigerate it before baking. For a twist, mix cheddar with a bit of mozzarella or add a pinch of cayenne for heat.
