A comforting Southern-style squash casserole featuring tender summer squash, sweet onions, sour cream, cheddar cheese, and a buttery cracker topping. A crowd-pleasing side for any occasion.

- 6–8 yellow summer squash, thinly sliced
- 1 medium yellow onion, sliced
- 1 large egg, lightly beaten
- 1 cup sour cream (or Greek yogurt)
- 2 cups shredded sharp cheddar cheese
- 1 sleeve buttery round crackers (like Ritz), crushed
- Salt and pepper to taste
- Optional: garlic, paprika, green chiles, bacon bits
Instructions
- Prepare Squash & Onions: Slice the squash and onions thinly. Steam or sauté them for 10–12 minutes until just tender. Drain thoroughly to remove excess moisture.
- Mix Ingredients: In a large bowl, combine the sour cream, beaten egg, squash, and onions. Stir in half of the cheddar cheese and half of the crushed crackers. Season with salt and pepper.
- Assemble & Bake: Preheat the oven to 350°F (175°C). Grease a casserole dish and spread in the squash mixture evenly. Top with the remaining cheese and crushed crackers.
- Bake for 30–35 minutes or until the top is golden and the casserole is bubbly.
- Let sit for 5–10 minutes before serving for best texture.
Notes
Feel free to customize with garlic, green chiles, paprika, or even bacon bits. For extra crunch, broil for 1–2 minutes at the end of baking.
