- 1/4 cup lime juice
- 2 tbsp Worcestershire sauce
- 2 tbsp soy sauce
- 1/2 tsp red pepper flakes
- 1/4 tsp ground cumin
- 2 tbsp olive oil
- 3 cloves garlic, minced
Instructions
- Whisk together lime juice, Worcestershire sauce, soy sauce, olive oil, minced garlic, ground cumin, and red pepper flakes in a bowl.
- Trim any thick membrane from the skirt steak.
- Place the steak in a resealable bag or shallow dish and pour the marinade over it, ensuring it’s well coated.
- Refrigerate for at least 1 hour (1–4 hours is ideal).
- Before grilling, let the steak sit at room temperature for 20–30 minutes.
- Preheat the grill to medium-high heat.
- Remove the steak from the marinade, letting excess drip off.
- Grill for 3–5 minutes per side to your preferred doneness.
- Let the steak rest for 5–10 minutes before slicing.
- Slice against the grain and serve immediately.
Notes
Use a meat thermometer for accurate doneness, 125–130°F for medium-rare. Keep a tablespoon of marinade reserved for brushing after grilling.
