  • 1½ cups Greek yogurt
  • 4 garlic cloves
  • 1 small cucumber, peeled and chopped

  • For the Fritters:
  • 2 medium zucchini, grated
  • 3 handfuls baby spinach, chopped
  • ½ cup feta cheese, crumbled
  • ¼ cup fresh herbs (dill, mint, oregano)
  • 3 large eggs, lightly beaten
  • 2 scallions, minced
  • 2 garlic cloves, minced
  • ⅓ cup all-purpose flour
  • ½ teaspoon baking powder
  • Salt and black pepper, to taste
  • Olive oil, for frying

Instructions

  1. Make the Garlic Tzatziki: Blend Greek yogurt, garlic, cucumber, olive oil, lemon juice, dill, and salt in a food processor until smooth. Refrigerate while preparing fritters.
  2. Prepare the Zucchini: Place grated zucchini in a mesh strainer, sprinkle with salt, and let sit 10–15 minutes. Squeeze out as much liquid as possible.
  3. Mix the Fritter Batter: Combine zucchini, spinach, feta, herbs, eggs, scallions, and garlic in a bowl. Gradually add flour and baking powder. Stir until well mixed and holding together.
  4. Fry the Fritters: Heat olive oil in a skillet over medium heat. Scoop about 3 tablespoons of batter per fritter into the pan. Flatten slightly. Fry 3 minutes per side until golden brown.
  5. Drain and Serve: Drain fritters on paper towels and serve warm with the chilled Garlic Tzatziki.

Notes

You can prepare the tzatziki up to a day in advance for deeper flavor. Squeeze zucchini thoroughly to avoid soggy fritters. Swap herbs based on your taste preferences.
