Description

A comforting zucchini pizza casserole that’s easy to make and loaded with cheese, perfect for satisfying pizza cravings while sneaking in veggies.


Ingredients

  • 4 cups shredded zucchini
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese, divided
  • 1 cup shredded cheddar cheese
  • 1 pound ground beef, browned
  • 1/2 cup chopped onion
  • 2 cups pizza sauce
  • 1 green bell pepper, chopped
  • 1/2 cup sliced mushrooms (optional)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions

  1. Place shredded zucchini in a colander, sprinkle with salt, and let sit for 30 minutes. Squeeze out excess liquid and mix with eggs and Parmesan.
  2. Preheat oven to 375°F (190°C) and grease a baking dish.
  3. Brown ground beef in a skillet, add onions, bell pepper, and mushrooms, and cook until soft.
  4. Stir in pizza sauce, oregano, garlic powder, and black pepper. Taste and adjust seasoning as necessary.
  5. Press zucchini mixture into the baking dish as a crust and pat it down firmly.
  6. Layer with half of the meat sauce, mozzarella, and cheddar, then repeat layers. Finish with cheese on top.
  7. Bake for 30-35 minutes until bubbling and golden. Tent with foil if browning too quickly.
  8. Let rest for 10 minutes before slicing.

Notes

Squeeze the zucchini well to prevent a watery crust. Feel free to adapt toppings based on preference.
